There are so many to choose from, but as a book on the pleasures of fishing, I can think of nothing better than The Philosophical Fisherman, by Harold F. Blaisdell. Another such pastoral book is the Well Tempered Angler, by Arnold Gingrich. I've read each of these at least 10 times.
The Compleat Surfcaster, believe it or not, is a really good book for the new saltwater fisherman, even if you don't want to fish the surf.
Saltwater Fly Fishing, by Lefty Kreh is a must-read for the aspiring saltwater fly fisherman.
Panfish, by Sternberg et. al, is a great book because it stands out as one of the few books that competently address the subject of panfishing.
