i am looking for a surf reel. how is the shimano torium 50? what would you use for surf fishing?

fishing in hawaii for GT's or ulua and oregon for oversized sturgeon

I'd say a big spinning reel is going to be your best bet for all around casting, line capacity, etc. You'll have to decide on best size based on how, where, and how big!
If you were going strictly for monster sturgeon, and fishing from a boat where distance casting is not an issue I'd take the Torium 50.

i was looking on making my own surf rod around 12 feet or so and around 60lbs and then a reel for oversized that will take one one fairly equal. while the normal size reel is a penn 320 gt level wind, i want one that can take it to the sturgeon :) and saltwater creatures.
