Larry-
What is the best place/time to really have a few days of catching non-stop sailfish in Central America?? Guatemala?? if so what is the best place for it??

No doubt, Guatemala!
I'd speak directly with the captains or lodge operator regarding timing. It varies a little from year to year, but I've been there when it was supposed to be the off season and it was still pretty amazing.
I fished out of Casa Viejo last time i was there and it was excellent in all regards, but from what i've heard, all the operations down there that were started by American and south african captains and fishermen are pretty top notch.
When the new laws protecting billfish in southern costa rica begin to take effect, we can all hope their fishing will rebound to the levels they once were as well!
