ever eat a Gar?

anyone out there ever eat a Gar? any tips or advice in preparation?

Not I, but I'm sure it would be better than the other way around.
Actually, once when I was in Texas at a Bait Store, a guy with a pick up load of big gar he'd caught on set lines told me he cleaned em with a chain saw lubricated with cooking oil, brought them to Galveston and sold them to a fish plant who made various fish products for major fast food restaurants whose names I won't mention!

Any fish that is in a recipe that states it is to be free of gelatinous tissue is not something I really want to try.
Fishing isnt a hobby.....its a lifestyle!

Get a good pair of tin snips and basically all you really want from the fish is the back strap (anything above the ribs). You need the tin snips to get through the skin of the gar. The rest of the meat is rather dark and that is where the gelatinous part comes in. Not bad really, but a lot of work for no more than you really want to eat from one fish. Personally I'll just catch and release them with my fly rod for a good time.
