Catfish flavor

OK folks I have a question for those who cook catfish. I recently caught a 10 lber and threw it back. I have had catfish strips at a local restaurant and they were very good, does the flavor suffer when the fish get to be large? If so, what soaking techniques work best to improve taste? Thanks for any help.

In my experience, big cats don't taste bad.
They are omnivores so their taste isn't as bad
on bigger pure fish eating species. But on big
cats I still like to leave the fillets in milk for
awhile. It kills the strong fishy flavor. After
soaking it I then just throw the meat in battered
eggs then rolled in bread meal and fried. Squeeze
a lemon on top after fried then serve with mashed potatoes.


Awe man, now I'm getting hungry.
