Any advice on a slower or faster reel retrieve for fishing jerk baits? I am looking to use the Shimano EJ for my jerkbaits. Was wondering if this might be too fast a reel for this type of fishing?

Yes, use both, and often incorporate on the same cast! Obviously, how fast you turn the handle has more to do with how fast the lure moves than the gear ratio of the reel!
Much depends on your personal technique, as in whether or not you "zip" the handle down a half crank when you jerk. It also depends on the lure. With practice I've found I can work a jerk bait just fine (meaning make it do any and everything intended or possible with it) using almost any gear ratio reel and rod length.
Perhaps the most critical factor is that the rod be firm enough to overcome the inertia of the lure to get it moving in the first place.
If that's OK, it's a matter of stroke and timing.
My advice with any new jerk bait is to begin using it in clear water or use really bright colors so you "get to know it" and what it does when you do what you do!
