Which reel is better for what an why? Why would you choose one over the other?

Hi T,
The Torsa is best thought of as a highly evolved Trinidad.
The Trinidad has a star drag. Torsa has a lever drag.(and has optional, interchangable drag cams)
Both have lots of cranking power, but the Torsa has more, plus can deliver almost twice the max drag resistance.
Trinidad has an adjustable "clicker", something I love for live baiting, but the Torsa does not.
Both cast remarkably well for such powerful reels and are amazingly strong for their size. I'd choose the Torsa for the most extreme applications, or if I'm using a very small reel and very heavy line. I'd choose the Trinidad if I was doing quite a bit of casting, trolling lures, and/or fishing with light line.
Also, obviously, if you're on a budget you can buy almost 2 Trinidads for the price of a Torsa. Check out the specs on the Shimano website or go to a local dealer and take a look at both and I think you'll see why!
