The Pacu are everywhere there are overhanging trees. Look for nut bearing trees or Brazilian Pepper Trees. The one time world record Red Bellied Pacu was caught in a local canal a few miles from my home(Rotonda,Fl.). It remains mounted on the wall of a local tackle shop. The angler was a saltwater guide and caught the fish while Snook Fishing. Sadly he took his own life a few years back.
