I don't think there is a "best" color. I usually let the fish decide that, but a good general rule is to either match the color of the water, the bottom or the natural forage, or go totally 180 and use the brightest, flashiest color that has the most contrast with the environment.
IMO, far more important than color is figuring out the speed or cadence that works best.
If I only had one or two colors I'd probably go with white with red tail, and redhorse.
